‘Behind the Shutters’ - Thought we’d left equations behind at school🧑‍🎓 Turns out making aperitifs requires a bit of maths.

Due to the liquid density of aperitifs, hydrometers don’t work in our liquid, so to give us an abv reading of Sommer Rhubarb & Raspberry Aperitif we need to follow a process of calculating the abv and volumes of each of the separate spirits before blending them all together with water to ensure our final abv hits 11% every time.

‘Behind the Shutters’ - Here’s a sample of our bitter tincture. When mixed in our final blend it forms the distinctive bitter aftertaste that is a must for aperitifs. Used to cleanse the palate and open up your tastebuds before food, bitters are key to ensuring a dry moreish finish to your Sommer Rhubarb & Raspberry Spritz.

To make our bitter tincture we macerate 30 botanicals, a mix of herbs, flowers, aromatic bark, citrus peel and spices in an 80% abv English wheat spirit for 8 days before filtering and adding to our final blend.

‘Behind the Shutters’ - Here’s our beautiful distillate, fresh from the still and sitting at 70% abv.

This six botanical distillate becomes the foundation of our Aperitif adding a real depth and complexity to Sommer Rhubarb & Raspberry Aperitif.

The light green colour comes from the botanical Wormwood. More commonly known for its use in making Absinthe. Along with Gentian Root and Cinchona Bark, these three botanicals add bitterness and herbaceous aroma.

We also use Lemon Peel and Lemon Thyme for citrus notes and Rhubarb Root to add an earthy, smoky flavour.

It smells incredible ❤️

‘Behind the Shutters’ - We distil six botanicals (more to come on those later) through our still ‘Bella’ at our Yorkshire distillery.

In honour of our agricultural roots the distillate is collected in 50L milk pails or ‘milk kit’ which were used historically by farmers in the Yorkshire Dales to transport milk from farms to customers.

‘Behind the Shutters’ - Our still features a ‘Thumper’. This allows for a secondary distillation in one run which gives us a higher quality final liquid with more flavour. Botanicals can be added into the Thumper to increase their flavour in the final spirit.
